This is another one of those recipes that I can’t get enough of. One (or two) sheet pans and really no clean up!! Love it. (I swear I’m not lazy :)). Use whichever colour peppers you have on hand; BUT stick to yukon gold potatoes. They are definitely the tastiest in this recipe.
Ingredients
- 4 Mild or Hot Italian Sausages
- 6 Medium Yukon Gold Potatoes
- 1 Large Yellow Onion
- 3 Bell Peppers (whichever colour you have on hand or like best)
- 2 TBSP Oregano
- 1/4 Cup Extra Virgin Olive Oil
- Salt & Pepper
Instructions
- Preheat your oven to 400 degrees. Slice up peppers, onion and potatoes and make sure they are all about the same size so they roast evenly. Throw into a large bowl and season with salt, pepper, olive oil and oregano. Then line a baking sheet with parchment paper and transfer the potatoes and peppers to the sheet.
2. On a separate baking sheet, line with parchment paper and add hot/mild sausages.
3. Throw both trays in the oven. Make sure to turn every 12-15 minutes to avoid sticking. Roast for a minimum of 45 minutes and up to a maximum of 1 hour. I wish I had more to say, but that's really it! This is what it will look like once it's done. I boiled some rapini and that was dinner!
