Udon Noodle Stir-fry

A stir-fry is one of my favourite go-to meals for a weeknight dinner. There are so many different options for veggies and these noodles are already cooked and ready to go. Makes for such a quick and yummy dinner! I thought it was quite timely with Halloween being today. This is a great meal for kids. Especially when you are pressed for time (and trying to get some food in them before they trick or treat!). You can prep your veggies in advance and throw this together in no time. And, who doesn’t love noodles?!!

Udon Noodle Stir-Fry

Ingredients

  • 1 Package Udon Noodles (800g)
  • 1 Large Yellow Onion
  • 3 Cups Green Cabbage
  • 1 Small Package White Mushrooms
  • 1 TBSP Ginger (grated)
  • 1 TBSP Chinese Chile Sauce (optional)
  • 2 Thai Hot Peppers, for garnish (red or green, optional)
  • 1/4 Cup Soya Sauce
  • 2 TBSP Vegetable or Canola Oil
  • 2 TBSP Sesame Oil

Instructions

  1. Start by taking the udon noodles out of the package, put in a large bowl and add 1 TBSP of sesame oil to keep from sticking.

    2. Cut up the onion, cabbage and mushrooms. I am not as concerned with accuracy in this step - you can really play around with how you like your veggies cut. Also, you can easily substitute for different veggies here. Broccoli, red pepper, zucchini - there are so many that would be great!

    3. On medium high heat, sauté onions in veg/canola oil for 3-4 minutes, or until beginning to brown. Then, add in mushrooms and cabbage. Season with salt, pepper, grated ginger and add half of the soya sauce. Let cook down for approx. 6-7 minutes, or to your desired doneness. Transfer to a bowl.

    4. In the same frying pan, on medium high heat, add in remaining sesame oil. Once warm, throw in the udon noodles. Make sure they are evenly coating the pan. Add in remaining soya sauce and the chile sauce. Since the noodles are already cooked, they only need a few minutes to warm. I would say about 5 minutes max.

    5. Add vegetables to pan and combine. Cook another 2 minutes and turn off the heat.

    6. Serve in individual bowls or in a bigger sharing bowl and season with the chile (if you like heat) for some colour! Enjoy 🙂
