Sausage with Roasted Peppers & Potatoes

This is another one of those recipes that I can’t get enough of. One (or two) sheet pans and really no clean up!! Love it. (I swear I’m not lazy :)). Use whichever colour peppers you have on hand; BUT stick to yukon gold potatoes. They are definitely the tastiest in this recipe.

Ingredients

  • 4 Mild or Hot Italian Sausages
  • 6 Medium Yukon Gold Potatoes
  • 1 Large Yellow Onion
  • 3 Bell Peppers (whichever colour you have on hand or like best)
  • 2 TBSP Oregano
  • 1/4 Cup Extra Virgin Olive Oil
  • Salt & Pepper

Instructions

  1. Preheat your oven to 400 degrees. Slice up peppers, onion and potatoes and make sure they are all about the same size so they roast evenly. Throw into a large bowl and season with salt, pepper, olive oil and oregano. Then line a baking sheet with parchment paper and transfer the potatoes and peppers to the sheet.

    2. On a separate baking sheet, line with parchment paper and add hot/mild sausages.
    3. Throw both trays in the oven. Make sure to turn every 12-15 minutes to avoid sticking. Roast for a minimum of 45 minutes and up to a maximum of 1 hour. I wish I had more to say, but that's really it! This is what it will look like once it's done. I boiled some rapini and that was dinner!
