Steak Souvlaki Skewers

This weekend my family and I celebrated my (not so baby) brothers 17th birthday! I decided that my contribution would be to cook the entire meal for 12 people! I highly regretted this when the comments started pouring in. If you know anything about my family, they are ALL opinionated and no one has a filter. Here are a few of the comments I received – and I must mention, all stomachs were empty and most were hangry at this point:

  • “Hi – where are you? We have hungry people waiting for the meal” — This was at 3pm (dinner was set for 6:30pm).
  • “Is that the rice? That’s all? Wow… I don’t think that will be enough” — There was enough.
  • “What are those? Why didn’t you just buy steak? It probably would have been easier” — It would have definitely been easier.
  • “Oh – I thought you said you were going to put mushrooms in the rice?” — Seriously??

Dinner was served at 6:30pm… in addition to these fun and tasty steak skewers, I made a Greek salad, rice, spanakopita and homemade tzatziki sauce – a Greek feast! Now fast forward to about 7:30pm, when everyone was full and stomachs were happy:

  • “This was the best salad I have ever had in my life.”
  • “Does anyone want more rice?”
  • “Delicious steak skewers – I’ve never had these!”
  • “Are you sure this tzatziki sauce is home made? It’s delicious!”

Never a dull moment.. 🙂 Here are a few pics of the crazy bunch!

 

Steak Souvlaki Skewers

Ingredients

  • 4 Top Striploin Steaks (or any steak of your choice as long as they are thick)
  • Juice of 1 Lemon
  • Bunch of parsley
  • 2 TBSP of Oregano
  • 2 Cups Olive Oil
  • 3-4 Garlic Cloves
  • 1/4 Cup Red Wine Vinegar
  • Salt & Pepper

Instructions

  1. Soak wooden skewers in water for 2-3 hours before assembling the skewers. If you have metal skewers on hand, even better!
  2. Start by cutting up your steak. You'll see that I cut them into 4 strips length wise, and then cut them in about 2 inch cubes.

    3. Now onto the marinade. I combined the last 7 ingredients into a bowl and used the immersion blender. I love a food processor but sometimes it's a lot to do the whole clean up thing! I find the immersion blender works just as well (with 1/4 of the clean up!).

    4. Get out a medium sized bowl and put the ziploc bag with the steak just on top of it. I find that it's much sturdier this way and when you are pouring the marinade on top, it allows the bag to stay in place. Pour the marinade on the steak and seal it shut. Massage it into the steak and let sit in refrigerator for a minimum of 1 hour and up to overnight. I had a few extra steaks, so I threw some in my freezer already marinated for one week night when we don't have time to prep a whole meal!

    5. Now for the fun part! Assembling the skewers. Once your skewers have soaked, drain the water and pat dry with a paper towel. I put 4 cubes of steak on each skewer. Place skewers into a large dish until ready for the BBQ.

    6. I like to let my meat come to room temperature before BBQing. I find that it makes for a juicier meat. This means leaving it out of the fridge for about 25-30 mins. Grill your skewers to your desired doneness. For medium rare skewers, I grilled for about 4 minutes on each side (2 sides) at a medium heat. Try not to turn too often.

    7. Once done, place on a plate with some tzatziki sauce and fresh lemon! Enjoy!

It was so perfect!!!!! Enjoyed every bite. Love you very much. 🙂 even if the rice was more than enough.
How much fun is to look back and laugh at our comments. If nothing was said we wouldn’t have priceless (comments) memories of the evening.
